Chicken Marsala

I’m still trying to find my voice here, I know that nothing more than a collection of recipes is boring so I’ll try to relate maybe a story of my day somehow involving the recipe included.

Ingredients:

  • 4 boneless chicken breasts
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon seasoning salt
  • 1/4 teaspoon thyme
  • 1/4 garlic powder
  • 3 tablespoons butter or margarine
  • 3 tablespoons olive oil
  • 4 to 8 ounces fresh mushrooms, sliced (1/2 to 1 cup sliced)
  • 1/2 cup Marsala wine
  • 1 cup Chicken Broth

Prepare a bed of your choice, I recommend Jasmine Rice or Egg Noodles.

Preparation:

Combine flour, salt, pepper, seasoning salt, thyme and garlic powder and coat each breast with the mixture and pat down to leave little residue.  Heat the butter and oil in a pan, place chicken and brown on both sides. Once done keep in a warm oven till the end.  De-glaze the hot pan with the broth and wine add the mushrooms and reduce to medium heat.  Allow to simmer until reduced by half.  Place the chicken back into the pan to absorb some sauce until just trace amounts of liquid remain.

Serve on a bed of rice or pasta.
